Why the fuck not? Language evolves. Words that used to mean one thing mean different things now.

If 50 years from now, nobody is.prejudiced against gays at all, but people still use the word faggot as a synonym for douchebag, will it be wrong? It no longer means what it once did. So why the hell wouldn't you say it?

Fact is, most people already use it in a way that has nothing to do with homosexuality. And as people become more tolerant of homosexuality, the word will only get more and more distanced from that meaning.

It's kind of similar to the way you are using Jesus Christ to mean something other than its literal meaning. Instead of meaning Jesus Christ the religious figure, you are using it as an expression of disbelief. Similar to how you would use, "holy shit."

Maybe I'm just not empathetic enough but I genuinely do not understand this.

I can see how the connotation would bother them and remind them of what they're going through but I don't see how it would be, in and of itself, offensive to them in the same way. At least as long as the person is willing to understand the context in which it's being used (i.e. by a person that doesn't know you).
